Sweet Corn- Chicken Soup




December is a month of winter, so a bowl of hot soup is good during the evening time, especially if you are going to make it at home, well all will love it.

You may be little bit lazy about going out in eve to have a cup of soup from your favourite restaurant because of the cold weather……….So please hurry to make the sweet corn –chicken soup at home and sit in front of your favourite TV programme and enjoy the soup.


Ingredients

1) Fresh Chicken – 300 gm (cut in to small pieces) - I used with bone.
2) Garlic cloves – 6 nos. (Crushed)
3) Ginger – 1” piece ( Crushed)
4) Whole pepper – 7-8 nos.( crushed)
5) Big Onion – 1 small ( chopped very thinly)
6) Water – 1 litter.
7) Fresh or frozen sweet corn – 100 Gms.
8) Corn flour – 1 ½ table spoon.
9) Egg white – 2 slightly beaten.
10) Chopped spring onion or coriander leaves – As required for garnishing.
11) Salt – to taste

For sauce

1) Green chilly – 3 nos. (Chopped in round shape.)
2) White vinegar – 1 ½ Table spoon.

Mix well the green chilly and vinegar and keep for 1 hour before serve.



Method

This is a quick & easy recipe to make.

Pressures cook the ingredients 1 to 6 (Approximately 10 whistle in medium heat) and keep it cool for sometime and strain the stock in a bowl. Take small chicken pieces from the residual and keep aside.

Cook the sweet corn in a separate pan for about 5 minutes (if it is frozen) and keep it cool. Then take a small portion out of it and keep aside (you can add this to your soup in the last stage) and remaining make a paste and mix it up in the stock.

Take a thick bottomed vessel and put the chicken stock and let it boil for 7 minutes and add shredded chicken and cooked sweet corn and cook again for 2-3 minutes. Then Dissolve the corn flour in 1/4 cup of water (Be careful of the corn starch, too much starch will spoil your soup and make it too thick) and add to the soup and stir continuously until the soup is medium thick and add the slightly beaten white eggs very slowly in to it and immediately take off the vessel from the fire. Serve hot with green chilly sauce, Soya sauce, white pepper powder and chopped coriander or parsley leaves.
