How to Make Chicken Mappas
Ingredients
1) Chicken – ½ kg
2) One big onion – 1 (Thinly sliced)
3) Ginger – 1 ½” – 1 piece – (Thinly sliced)
4) Garlic – 3-4 nos. (Thinly sliced)
5) Shallots – 10 nos. (Sliced)
6) Green Chilly – 2-3 nos.
7) Coriander powder – 2 table spoon.
8) Chilly powder- ¾ table spoon
9) Pepper powder – 2 teaspoon
10) Vinegar – 1 table spoon
11) Garam masala – ½ table spoon
12) Turmeric powder - 1/2 teaspoon
12) Oil – 1- 2 table spoon
13) Salt - to taste
14) Coconut milk – Fresh coconut milk will give you the original taste (but I used coconut Eastern powder 4 table spoon)

For seasoning
1) Mustard seeds- 1 teaspoon
2) Shallot – 2-3 nos. (Chopped)
3) Curry leaves – As required
4) Oil- 1 table spoon.
Method
Take a thick bottom pan heat oil add garlic & ginger sauté for few seconds then add sliced big onion, green chilly & shallots sauté until the onion becomes transparent then add coriander powder, chilly powder, turmeric powder & garam masala one by one sauté until the raw smell out and oil starts appearing and add chicken pieces and salt mix well with the masala then add coconut milk (2 ½ table spoon with 2 cups of water - slightly thin) then bring to a boil add vinegar and cook the chicken in a medium low heat until it cooked well. Then open the cover and add the balance coconut powder (dissolved in Luke warm water (3-4 table spoon of water). Then add the pepper powder and cook for another 2-3 minutes. Finally do a seasoning with the above ingredients.
