Ingredients
1) Basmati Rice or nellukuthari (Pachha) - 1 ½ Glass.
2) Sarkkara/Jaggery – small 3 blocks.
3) Coconut Milk or grated coconut – ½ Cup
4) Cashew nut- Optional – 1 table spoon
5) Raisins – 1 table Spoon
6) Ghee – 2 table spoon
7) Cardamom Powder- ½ tsp
Method
Soak the rice for about 30 minutes, for the meantime make the Jaggery syrup in a pan with a little water and melt it by keeping on a low fire. Cook the rice with 3 cups of water, once it is done add the jaggary syrup to the rice and cook again in a slow fire. Grind coconut and add to the rice- jaggary mix. Finally add fried raisins, cardamom powder and ghee. Your Ari Paysam is ready to eat!!!!
