This cake is a local stuff and is available in all most all the tea shops near by road side in Kollam and Trivandrum areas.
How to make vettu cake/Sweet Cross cake
1) All purpose flour – 2 ¼ cup
2) Baking powder – 1 ¼ tsp
3) Sugar – ¾ cups ( Powdered)
4) Egg – 2 nos ( Beaten well)
5) Water or milk ( as required)
6) Cardamom powder or crushed - 1 teaspoon
7) Oil – For frying.
Take a big bowl and mix baking powder and all purpose flour, and then add sugar, cardamom powder and beaten eggs and make tight dough using enough water or milk and keep aside for 20 minutes.
Take small portions from the dough and make rough square shapes using your hands. Then take a sharp knife to make two medium deep cuts similar to a cross. Fry it in any vegetable oil, till golden brown.
Note: If the oil is too hot the cakes outside portion gets dark quickly, while the inside portion will remain uncooked, so please fry the cake in a very medium heat.
