Homemade Garlic paste / sauce

Homemade Garlic paste / sauce

How to make Garlic Paste

Ingredients

1)      Garlic cloves- A medium pod of garlic ( 10-12 nos. are enough)
2)      Coarse Salt – a large pinch ( If coarse  or sea salt is not available use normal salt)
3)      Lime Juice – from 1 lemon
4)      Egg white – from 1 egg
5)      Oil – 1 cup- Canola oil, Corn oil, or other neutral-flavored oil.

Method

Peel the garlic and put it in a mini chopper or a blender add a large pinch of coarse salt or Sea salt, which helps grind the garlic into a paste.

Run the food processor or blender until the garlic is evenly chopped into small pieces. Stop whenever the garlic is thrown to the sides, and then scrape it back down to the center using a spatula. Continue the processes for some time till the garlic become too small in size.

Next is adding the lemon juice in to the garlic and pulse it again tills combined.
Another important step is adding the oil – do not add the oil at a time (Add half the oil in bit by bit.

A thin stream is not necessary, (what I mean is a reasonable steady pour is good). Likewise finish the oil until you've reached the texture you desire.

Now you will see the consistency change into something wonderfully creamy and light.
Check the taste at this stage and add salt and lemon juice according to your taste needs. (If necessary)

Final stage, Separate the white of one egg and blend into the garlic paste until smooth.

Your Garlic paste is ready to enjoy, use it with Arabic bread/chappathy/shavarma etc.

Home Made Ghee

Home Made Ghee

Homemade ghee from Butter

Homemade ghee from Butter

Things You need

1) Unsalted Butter – 400 gm ( or more)

2) 1 table spoon water( opional)

3) 1 pinch of salt(optional)

4) A heavy Bottomed pan

5) A fine mesh strainer

6) A glass jar.

Keep the butter in room temperature for some time (so that you can cut the butter easily).

Cut the butter in pieces and keep aside

Take a heavy bottomed pan and add the butter in to it.

Make sure to keep the heat medium and let it melt slowly until completely melted.

Once the butter is melted, you will find the fat separating from the milk solids.

It will start foaming and bubbling. At this point, lower the heat.

The bubbles will gradually get smaller and smaller

Soon there will be less bubbles and more foam.

The next stage is the milk solids will start to brown.at this stage just sprinkle 1 table spoon of water in to the boiling ghee followed by a small pinch of salt.( I prefer my ghee in a grainy texture than watery , if you don’t like grainy texture don’t sprinkle water or salt in tit)

When the bubbling and foaming stops, the milk solids turn deep brown and fall to the bottom of the pan and the Ghee itself become a golden in color.

Remove from heat and let it cool.

Strain the Ghee using a fine strainer and

Filter this into a clean glass container.

Zaatar

I have acquired many middle eastern tastes from the past 10 years as a resident of UAE , like Shawarma, Falafel , Hummus, garlic paste, Mutabel, tabouli, finally Zaatar .

Wonder what I am talking? As a blogger & a food lover I like to make authentic recipes irrespective of any barriers!!!!

My hubby made me crazy about the hot Zaatar bread made by Lebanese restaurants.

So finally I decided to make it at my kitchen and started searching for the green mixture ( Zaatar) which is poured over the bread.

I called my friend & colleague Ms. Mariam to know more about this recipe , she told me Zaatar is a Palestinian and Lebanese delicacy , UAE also acquired that taste from that countries.

Next i called my another Palestinian friend Hanna to know much about Zaatar ( she revealed to me that , she is lazy in cooking ,where as her mother is a wonderful cook ) and i asked her where can I find that Zaatar mix , she informed me not to worry about the mix and she can bring it for me. Next day she sent me the herb mix along with a special pure olive oil

When I reached home I can't stop my urge to make the recipe instantly, unfortunately the flour was not enough to make the dough so I tried the Zaatar on an Indian rice batter (Dosa batter).

Once again thanks to Hanna and her wonderful mother for the nice gift.
Recipe would be posted soon
