Honey - Mango Cake
1) Maida / All purpose flour-125 gm.
2) Baking Powder-1 tsp
3) Baking Soda-1/4 tsp
4) Unsalted Butter- 125gm
5) Salt -1/2 tsp
6) Powdered Sugar-125gm
8) Grated Lime/ Lemon Zest-1/4
9) Milk- 1/4
10) Honey - 1 table spoon.
11) Vanilla Essence-1/2tsp
12) Chocolate shaving - For decoration.
13) Fresh mango chopped - 1 no
Beat the sugar, butter, milk until creamy and fluffy,add the vanilla extract, orange zest and eggs till combined
Sift the flour with the baking powder, baking soda and salt. Then add the same slowly in to the batter with 1 table spoon of honey (don’t overbeat). Finally fold it in a greased cake pan.
Bake the cake for about 30 -35 minutes in a preheated oven over 180 C or bake until a cake tester comes out clean. Transfer to a wire rack; cool slightly. Invert the cake to a serving platter till the cakes cool down completely.
Cut the cake horizontally in to 2 even pieces and spread chopped mangoes evenly on the cake .Decorate the cake with frosting cream & fresh wedges of mangoes and chocolate shavings.
