Karimeen Roast/Pearl Spot Fish
First time I got some fresh Karimeen from the fishmonger nearby my house. The seller told me it’s fresh and also from kerala (If it is from kerala……….how could it be fresh?) What so ever it is…..The fish was really fresh and I prepared it in my own way…..using different ideas from internet. Any way it came out well……….!
A) Ingredients for Karimeen fry
1) Kareimeen – 2 pieces ( Big)
2) Salt- to taste
3) Pepper powder- ¾ table spoon( crushed)
4) Red chilly Powder – ¾ table spoon
5) Turmeric powder – ½ table spoon
B) Ingredients for Karimeen Roast
1) Shallot – handful ( Chopped )
2) Garlic clove- 10 pieces ( crushed)
3) Ginger – 1 ½ inch piece ( crushed)
4) Green Chilly – 2-3( Chopped)
5) Tomato – 1 Big ( Chopped)
6) Curry Leaves- As required
7) Salt – To taste
8) Coriander powder – ¾ Table spoon
9) Kasmiri Chilly powder – ¾ Table spoon
10) Pepper powder – ½ table spoon.
11) Turmeric powder – 1tea spoon
12) Coconut oil – As required
13) Coconut milk- 4 table spoon.( use 1 ½ cups of water)
Method
Clean the fish very well, as it is a fresh water fish the smell of the fish is different than the normal fish, so please scrape carefully the fish to remove the black color & scales from the skin using a small knife and wash it thoroughly and again rub it with crystal salt, vinegar & 2-3 pinch of turmeric powder.
Make gashes on both sides and marinate the fish with 2-5 from the above list “A” and keep aside for some time and fry the fish using oil and lift it up and keep aside.
For Roast
Heat coconut oil in a pan and add mustard when it pop up add ginger, garlic, green chilly and shallot one by one then sauté it until the shallot turns to light brown, then add the Masala from the list “B” (8-11) and sauté again for 1 minute in slow fire then add curry leaves and chopped tomato and sauté until the tomato pieces are well cooked. Then add the coconut milk, when it starts boil add fried fish very carefully and cook in a slow fire until the Masala cover the fish (cook both sides). Take a serving dish and place the karimeen and pour the balance gravy over it and enjoy the dish……………***********
