Poori & Dry Potato Mix ( Baji)

Ingredients

1) Wheat flour- 2 ½ Cups.
2) Salt – As required
3) Luke warm water- 1-1 ½ cups.
4) Oil – As required

Method

Take a large bowl and put wheat flour & salt then mix well, then add water little by little and mix well the flour to a dough form using hands, then knead the dough for sometimes, until you get soft dough. Keep the dough for 5-6 minutes. Then make small balls out of the dough and roll it out into round shapes. Take a pan and heat oil and deep fry both side of the poori, press very slightly on each side with a slotted spoon till the poori puffs up.

Poori Masala/Dry-potato mix/Baji

Ingredients

1) Potato – 4-5 pieces(mashed)
2) Onion – 2 pieces. Finely chopped
3) Green chillies – 3-4 Sliced
4) Oil – 3 table spoon
5) Mustard seeds- 1/4 tsp
6) Chana dhal (kadala parippu) or Sambar dal – 2 table spoon.
7) Tomato- 1 no.( chopped)
8) Chilly powder- 1 ½ tea spoon.
9) Turmeric powder- 2 pinch.
10) Curry leaves- as required.
11) Salt – To taste.

Method

Pressure cook the potato’s and peel off the skin and mash well and keep aside.Take a pan and heat oil and splutter the mustard seeds, then add chana dal and sauté for few seconds then add onion, green chilly and sauté till slight golden brown and add chilly powder and turmeric powder and sauté again for few seconds, then add chopped tomato’s and cook for 2-3 minutes then add the mashed potato mix with ½ cup of water and mix well and Garnish with curry leaves.
