How to make mutton stew

Ingredients


1) Mutton – 500 gm.
2) Potato – 2 small .( Chopped as cube shape)
3) Big Onion – 1 big piece.( chopped thinly)
4) Ginger – Chopped OR crushed (1” piece-2 nos.)
5) Garlic – 8 cloves.( chopped OR crushed)
6) Green Chilly – 6 nos ( Split open length wise)
7) Cardamom- 5 nos.
8) Clove – 5 nos.
9) Bay leaves – 3-4 small pieces
10) Cinnamon stick – 1” piece-5 nos.
11) Coriander powder – ¾ table spoon.
12) Tomato – 1 small ( chopped
13) Coconut Milk – Thin- 1 ½ cup, Thick- ½ cup.
14) Crushed pepper powder – 2-3 teaspoon
15) Vinegar – 1 ½ teaspoon.
16) Water – ½ cup.
17) Curry leaves – As required.
18) Salt – To taste
19) Oil – 1-2 table spoon.

Method

Pressure cook the mutton with little garlic, ginger, pepper powder, vinegar, water & required salt for about 6 whistles and keep aside.

Heat 2 table spoon of oil in a thick bottom pan throw whole spices (7-10) and sauté about 30 seconds, then add crushed garlic and ginger again sauté for 30 seconds then add chopped big onion sauté until transparent stage then add green chilly sauté again for few seconds. Then add coriander powder sauté until the raw smell out in the medium heat. Then add tomatoes and sauté until it’s done. Then add potatoes, cooked mutton and thin coconut milk and cook for about 10 – 12 minutes in medium heat at this stage mash 3-4 pieces of cooked potatoes in the stew using a thick spatula and mix well. (This process will give a thick & creamy consistency for the stew). Then add thick coconut milk, crushed pepper powder and curry leaves bring it to a boil in a medium heat about 5 minutes and do a taste test and adjust the salt then take off the vessel from the stove and garish with some fresh curry leaves.
