Tomato Rice ( Thakkali choru)


How to make Tomato Rice ( Thakkali choru)


1) Rice – 2 cups
2) Water – 3 cups
3) Tomato - 3 nos. ( Medium size)
4) Onion - 1 no( Big size)
5) Green Chilly – 2 nos.
6) Ginger – 1 small piece
7) Garlic – 2 nos.( small size)
8) Chilly powder – 1 teaspoon
9) Mustard seeds- 1 teaspoon
10) Whole pepper – 1 table spoon
11) Cumin seeds – ½ teaspoon (Jeerakam)
12) Salt - As reqd
13) Coriander leaves (chopped) - A few
14) Oil – 1 table spoon

Method


Heat the oil in a pressure cooker and add the mustard seeds and pop up, then and jeera and whole pepper for few seconds, then add green chillies, minced garlic, and ginger for few seconds, then add chopped onion until it turns transparent then put chopped tomatoes till soft and add chilly powder and again sauté for few seconds then add rice and fry it till all the rice is well coated with the masala’s and vegetables.


Then add water and mix well, check the salt at this stage. Let it boil and immediately cover the cooker and put the whistle and cook the rice in a medium heat for about 1 whistle only.
Keep aside the cooker to pressure off for about 15 minutes then open the lid and Garnish the rice with cashew nuts & raisins. Serve hot with salad of your choice.
